Juan's Flying Burrito
OUR STORY Juan’s lit up on Feb.7, 1997, just before Mardi Gras. Loosely based on the San Francisco Mission-style burrito joints that had been in vogue during the ’80s and early ’90s, we differentiated ourselves from many of the “scoop-and-serve” “tex-mex” restaurants that had popped up in New Orleans during the early and mid ’90s. We made our food to order and finished our flavors a la minute on the grill.
